The founder and farmer, Joseph Cicero has been a member of the NY State Maple Producers Association since 1993. This Maple syrup is all natural, organically processed from a family owned farm in NY State.
Joseph and Cathy Cicero are the Maple Producers and owners of Circle C Maple Farm. The first sugaring of 2011 began in early March and they will tell you that the sweet smells from the sugar shack are intoxicating. In 2010, Joe and Cathy invested in expanding production to meet demand, and thankfully Mother Nature offered up a wonderful 2011 season for maple producers.
Joe and Cathy looked for land for many years in the mountains and their property has meant a lot to them. They wanted to do something special with their land and one quarter mile up the road, sits a log cabin built by Joe with family and friends. However, the more he and Cathy looked and asked the questions of the land, the more one thing began to stand out, their maple trees, thus a new hobby was born, sugaring.
For 18 years, Joe and Cathy have been proud of this product that comes from their own land. At conferences, they were told “let the land work for you.” They are thrilled to offer this all natural and nothing phony about it product and 2010 marked the very first year the syrup was made available to folks outside of Joe and Cathy’s family.
Cathy is sure to tell you that you can put maple syrup on everything from oatmeal, ice cream, cereal, fruit, squash, chicken, or with every vegetable. She may even make some bacon and maple cupcakes this year.
Joe will remind you, that he does NOT use the following in our processing:
A reverse osmosis machine
Vacuum systems
